Originally written for Well-BeingSisters.com, I wanted to share this as it is so tasty and a real health boost in amongst all the rich foods you may be consuming this festive season. It's really easy to make too!
My antioxidant and fibre filled Butternut Soup with a rich and delicious health booster
is great as a Christmas dinner starter or a hearty soup to warm you right down to your toes.
You can make lots of the butternut base and keep in the fridge and make
the booster each time you heat some of the soup.
Ingredients
Soup
1 Whole large butternut squash
2 Large red or white onions
1 Litre of water
1 Organic chicken or vegetable stock cube
Avocado oil (or Olive oil)
Pinch of chili
Booster
20 x Brussel sprouts
Fresh sage leaves (two handfuls with stalks removed)
20-30 organic almonds crushed with skins on
Finely grated zest of two oranges
Directions
You’ll need a hand blender, mandolin slicer and mortarand pestle or something like it to crush the almonds.
Soup
Peel and cube the whole butternut squash, chop the onions and place into a
large pan with the water and stock cube. Bring to the boil, then add a little oil to help
release nutrients and simmer until everything is soft, add a little more filtered water.
Season with a little of mineral salt and a pinch or two of chili. Blend until smooth.
Booster
Use the mandolin (or sharp knife) to finely slice the Brussels. Chop the sage leaves.
Add a little oil to a non-stick pan, turn to medium heat add the Brussel slices, sage,
and orange zest along with a pinch of mineral salt. Cook enough to soften, remove
from heat. (very important to not overcook or let the brussels catch)
Serve the soup into a bowel, spoon some booster mixture into
the middle then add the crushed almonds.
