Delicious and light alternative to potato mash.
Ingredients/directions for 2 servings
Organic Cauliflower
Small knob of clarified butter, goat’s butter or splash of olive oil
Pinch pink Himalayan salt
Ground white pepper
Hand Blender or hand masher
Garnish with chives or other fresh herb.
Directions: Cut cauliflower into florets and steam or cook in shallow water until quite soft but not too soft, (or can keep slightly crunchy for texture)
Add butter or olive oil and seasoning, blend until smooth. Use as you would mashed potato or as a puree and place in centre of a plate drizzle with olive oil and place a salmon fillet or vegetarian fritter on top, add greens.
Option 1:
Pinch ground cumin and or turmeric to give a more exotic flavour and colour and increase anti-inflammatory properties.
Option 2:
Add cauliflower mash to an oven proof dish, sprinkle with grated hards goat’s cheese and grill for 1 minute until melted but not browned (avoiding carcinogenic acrylimides)
Cauliflower is high in Indole 3 carbinoles (I3C) and other health promoting nutrients that support the body's detoxification pathways, making this “white” food unlike the processed white foods that you should avoid.
