Mushroom & Blackbean Soup - Heart protective, immune boosting and microbiome supportive.

Ingredients for 2 servings

6 Large Portobello mushrooms

1 Large leek, red or white onion

1 Whole carton or tin of black beans

6 Fresh lime leaves (from all supermarkets in herb aisle)

1 Pint of Filtered water

Olive oil

1-2 pinches of pink or sea salt


Directions

Place water in the pan on high heat with lime leaves, add chopped mushrooms, sliced leek, or onion and bring to boil then simmer for 5 minutes. Strain the carton of black beans and add to pan, add a splash of olive oil and simmer the mixture for 20 minutes (you may need to add a little more water) Take from heat, remove half the mixture and blend until smooth. Add back to the pan, this creates a smooth base and keeps the texture of the mushrooms. Season and serve.
